First to the Fray:
Mordrak and any unit he is attached to Deep Strikes without scatter on your first turn. Nothing can stop this.
Mordrak attached to 10 Terminators, deep strikes on your flank, in cover if possible, and blasts at your flank before the charge.

Deploy in cover with your high armored troops (tyrants with guard, termies) or expendable units on your flanks. Let them get shot, charge with fleeting units next turn.

Orks: Deploy nothing first turn and then bring all in reserves or in Dawn Of War race your trukks across the field for a turn 2 charge

Have a small (5 man if posable) jump pack assault squad that jumps in front of him and takes the charge while the rest of your army moves away, shooting the whole time ( if you play mostly gun line ). If you are fielding a dedicated CC unit you do the same but they counter charge instead of backing away like the rest of your army.

the two of those ruin most any unit, but that is what they do and do well!
if you really want to stop him just make sure your units have double coverage and don't make the whole board your playground during the setup phase.
I know it is coming when I set up because I can look at your list. in a non-tournament game I think you are a good person and would tell me. Also, if you set up against it it could give the rest of the GK force an advantage so the idea to just take it in the face and carry on despite the losses may be warranted if you can win out regardless. There is no discernible way to make over 200 pts worth of unit in your face not do something. overreacting will cause a huge mistake that will effect more than the units in the immediate area.
