rubble piles are probably the easiest. just keep your sprues from plastic models. cut them up to odd lengths and glue them down on a base. cardboard, hardboard, plastic card all work well. glue some flock down (sand, small rocks, etc) or spray it with some textured spray paint and then paint it up. done.
hedges are easy pick up some cheap green scratch pads. cut along on of the edges (i prefer long edge) about 2 inches then put some glue along one side and fold it in half long wise and then glue it to a base. if you want you can cut the top to make it not level. throw some sand on the base and youre set.
easy buildings can be made out of cardboard. if i recall correctly i think there is still a tutorial on the gw website for making buildings out of cardboard. pretty easy. draw out where you want to cut out windows or broken walls. you can make extra levels. just remember to put some support under the levels so they will hold the wieght of the models. glue it to a piece of hardboard or cardboard. add sand. fill the edges of your cut cardboard with sheetrock plaster. i prefer hitting it with base coat of textured paint to better hide that its cardboard then paint it up and add some other flock etc.
thats just a few.

A lot of us use the plastic styrene from 100 yen shop. These come in boards usually from 17x11 to even larger poster size. Cheap and easy to cut you can put some glue down on these and make hills and glue buildings you make to them as a base. Some people use mdf board (compressed wood) as bases for buildings. If you'd like, I can go over some of this with you next game meeting.
Great ideas Grip, I'd not even thought of using scratch pads fro hedges.
